We are thrilled to announce a new collaboration between @thaikitchenoftheworlduk and @cookingwith_yui 2019 Quarter Finalist @bbc’s @masterchefuk and founder of @cryingtigercafe_byyuimiles. Each week Yui will do a live demo on her social media pages of an authentic Thai recipe ➡️ Every Wednesday on IGTV at 5pm! This week she will cook Nam Tok Salmon, a tasty and healthy salad delicious on its own or paired so well with Thai sticky rice. Ingredients 3 pieces Salmon (sliced up to thin pieces) 1 cup Panko breadcrumbs 1/2 cup Milk 1 cup Plain flour 1 pinch ground pepper, salt Salad- 1 Baby gem lettuce 3-5 Shallot Half Cucumber (thin sliced) 1 handful Mint leaves 1 handful Coriander Sauce- 2 cloves Garlic (finely chopped) 2-3 Thai red chillies 1 tsp dry chilli flakes (optional) 1-2 Lime 1 tbsp thai chilli jam or Nam prik pao 1-2 tbsp Fish sauce 1-2 tbsp Palm sugar or brown sugar 1-2 tsp grounded toasted rice Fry- 2-3 cup Cooking oil Steps Prepare 3 plates of plain flour, breadcrumbs and milk. Seasoning your breadcrumbs with salt and pepper. Place pieces of salmon one at a time onto plain flour, milk then breadcrumbs then leave it aside on a plate ready to fry. To make ground toasted rice, add a handful of jasmine rice on a dry pan with no cooking oil. Toast your rice for a good 20-25 min on a medium heat until rice become brown and toasted. Pound them in pestle and mortar. Mix all the sauce ingredients together in a big mixing bowl. Add your salmon in and mix well. Add salad ingredients toss them together quickly and serve. This is @cookingwith_yui Nam Tok Salmon or Crispy Salmon Waterfall Thai Salad. She uses Thai Chilli Jam or Nam prik pao to add an extra flavour to the nam tok sauce. Yui is working with us to promote authentic Thai food and Thai products. Her recipe of the week is her homemade Nam Tok Salmon. You can go to @essenceofthailand to get some Thai ingredients.
